Sweet Potato and Cheddar Hash with Mushrooms and Chicken

35 min / active 30 minServes 2

A one-pan hash where every component gets browned properly instead of steamed together: sweet potato crisped hard, mushrooms given room, chicken seared and sliced back in, cheddar off the heat so it stays melty rather than oily.

Ingredients

  • chicken breast1 large (about 10 oz), or 2 small
  • sweet potatoes2 medium, peeled and cut in 1/2-inch cubes
  • baby bella mushroomsa handful, quartered
  • cherry tomatoesa generous handful, halved
  • sharp cheddarabout 3 oz, coarsely grated
  • neutral oil2 tbsp, divided
  • butter1 tbsp
  • smoked or sweet paprika1 tsp
  • garlic2 cloves, sliced thin
  • salt and black pepperto taste
  • something sharp to finish — hot sauce, vinegar, or a squeeze of citrusa few drops

Method

01

Pat the chicken dry, season both sides with salt, pepper and half the paprika. If the breast is thick at one end, butterfly it open so it lies flat — even thickness matters more than anything else you'll do to it tonight.

Watch for

A dry surface. Wet chicken steams and never takes color.

02

Heat 1 tbsp oil in a large skillet over medium-high. Sear the chicken undisturbed 5–6 minutes, flip, add the butter, and cook another 4–6 minutes, spooning the foaming butter over the top.

Watch for

Deep golden crust on the first side before you move it, and 165°F / 74°C at the thickest point. Pull it to a board to rest.

03

Same pan, no wiping. Add the remaining oil and the sweet potato cubes in a single layer with a good pinch of salt. Leave them alone 4–5 minutes before stirring, then cook 8–10 more, stirring occasionally.

Watch for

Edges going dark and craggy, centers yielding to a fork. If they're browning faster than they're softening, drop the heat and cover for 3 minutes.

04

Push the potatoes to one side, add the mushrooms to the clear space with a pinch of salt. Let them sit until they've released their water and it's cooked off, then brown them, 5–6 minutes total.

Watch for

The squeak-and-steam stage passes and they start to sizzle and gild. Salting early pulls the water out faster.

05

Add the garlic and remaining paprika, stir 30 seconds, then the cherry tomatoes. Cook just until the tomatoes slump and a few burst.

Watch for

Garlic should smell sweet, not sharp — it burns in under a minute at this heat.

06

Slice the rested chicken across the grain and fold it back in with any juices from the board. Kill the heat, scatter the cheddar over the top, and cover for 1–2 minutes.

Watch for

Residual heat only. Cheddar melted over live flame breaks and goes greasy.

07

Finish with hot sauce, vinegar or citrus, taste for salt, and eat straight from the pan.
